Tunisia is both the most northerly and the smallest of the North African nations. The food of this country is diverse, influenced by Berber and Arabic cookery as well as Mediterranean cuisines. Algerian cookery is also notable for its use of hot chillies in a whole array of dishes. Here, two classic Algerian dishes, a traditional couscous and a sweet pastry are presented.
