Banana Cream Pie (Diner Style)

Banana Cream Pie (Diner Style)

Ingredients (use vegan versions):

    2 cups ice-cold soymilk (I used rice; put milk in freezer for twenty minutes)
    1/2 cup sugar (I used 1/2 cup erythritol + 1 heaping 1/32 teaspoon of stevia extract powder)
    4 + 1/2 tablespoon ClearJel (not instant)
    1/4 teaspoon salt
    1 tablespoon vegan margarine (Earth Balance Butter)
    1 teaspoon vanilla (I used Nielsen-Massey)
    3 bananas (medium in size)
    9" pre-baked vegan graham cracker pie crust

Directions:

1. Slice bananas and sprinkle with lemon juice; mix the two  in a bowl; this is to prevent the bananas from browning.

ASPARAGUS

Asparagus is one of my favorite veggies. Adding asparagus to any meal just seems to add a touch of elegance. As with most veggies, asparagus has its own very special flavor, which is a result of the combination of specific nutrients it contains.  I find it interesting that asparagus comes from the lily family, and is found in many different colors including green, pink, purple and white.  Pretty.  :O)

SPINACH

Can you remember the first time you were fed spinach?  Most likely not, since your parents probably tried to feed you pureed spinach before you could object.  They just knew that the day would approach soon enough when you might turn up your nose and "just say no" to spinach. I remember how let down I felt by Popeye for leading me to try a food that was so disgusting tasting.

It wasn't until I went vegetarian that I actually started to appreciate the flavor of spinach.  My tastebuds were going through a lot of changes, as most of ours do when we go veg, and suddenly spinach didn't seem so bad.  In fact, it tasted downright good.

But it wasn't until I started understanding the importance of a healthy vegan diet that the main purpose of spinach upon this earth really hit home for me.

Since spinach is a dark leafy green, you may already know that it's an excellent source of calcium, protein and Omega 3 Fatty Acids.  But let's talk about the most dense nutrient you'll discover in spinach

BARLEY

Have you ever tried barley?  It's a plump little grain that is delicious whether eaten as a breakfast cereal, added to soups and stews, used in place of rice or mixed with other grains, even finely ground and used as a flour!

Personally, I didn't start cooking with barley until just two years ago!  (Isn't it fascinating how many foods there are out there for us Vegetarians to discover?)  Barley added such a wonderfully delicious flavor and texture to my soups that I started to experiment using it in other ways.  It's a fun little grain and one that you're sure to love.

Barley has a nutty flavor, and due to its gluten content makes for a chewy grain that is reminiscent of pasta, and who doesn't love pasta?  Barley is a most comforting food

But what I love most is learning about the nutritional profile of barley — it's quite impressive.  There's so very much to learn about the nutrients in barley, but as always I'd like to highlight the most dense nutrient encased in this delicious grain…
