Most Amazing Green Thai Curry w/Curry Infused Couscous

Ingredients (use vegan versions):

    1/2 - 3/4 prepared seitan (I made the kind out of VWAV)
    1 cup couscous
    2 cups vegetable broth
    1 can coconut milk
    2-3 tablespoons green curry paste (Thai kitchen is vegan)
    1 tablespoon curry powder
    veggies!
    I used: broccoli, carrots, leeks, garlic, peas, and a can of diced tomatoes
    small bunch of fresh basil leaves

Directions:

Go on and prepare your seitan.  This will take about 1.5 hours.  If you’re feeling curry-licious, add a tablespoon or 2 of curry powder to the wheat gluten before you mix it all up.  While it’s cooking and…

Frozen Fruit Skewers

Frozen Fruit Skewers

Ingredients (use vegan versions):

    skewering sticks
    bananas, cut into 4-5 pieces
    grapes
    grapefruit, tangerines or favorite citrus fruit, sectioned
    Chocolate-covered variations:
    vegan chocolate chips
    -or-
    cocoa powder mixed with water

Directions:

Have all fruit un-frozen. Slide pieces of fruit onto skewering sticks and pop em into the freezer.  If you’re choosing to make the chocolate covered with chocolate chips, melt the chips in a microwave in 30 second segments, stirring in between. Or you can use a double broiler. If using cocoa powder, mix with water and pour over skewers lined on wax paper or…

Simply Stuffed Shells

Ingredients (use vegan versions):

    1 box pasta shells
    1 jar pasta sauce
    1 block tofu
    1 can coconut milk
    garlic powder
    onion powder
    paprika
    salt and pepper
    Italian seasonings like basil, oregano
    optional:
    broccoli
    spinach
    onions
    garlic

Directions:

My spices aren’t measured out because I season to taste. sorry if that’s not very helpful to some..
