I am getting excited for Slow Food Nation. Leading up to my departure I am blogging like mad over at the SFN blog, and keeping up with the news there posted by other bloggers. Just over a week ago, Naomi Starkman wrote about the Commonwealth Club in San Francisco’s panel series entitled How We Eat. There was a panel last week featuring Eric Schlosser, Alice Waters and others and I thought you would enjoy seeing it too, so I posted the video above. Here is a quote I enjoyed from Alice Waters:
“When we eat fast food, we are eating the values of that fast food. And its telling us that food should be cheap. And its telling us that advertising confers value, and that standardization is more important than quality, and that kitchen work is drudgery. This is what is being said. We’re eating those ideas, those values. So we have to come to Slow Food values, and we have to understand that food is something very precious, not something that [comes] after the Nike shoes, the cell phones and the cars and whatever else we decide we’re going to spend our money on. It should be way up there [in our values]. And we either pay up front, or we pay [later].”
Each week from the CSA I’ve been getting zucchini, and as a result I had a little pyramid of them on the bottom shelf of of my fridge, waiting to be converted in to something fantastic. Zucchini bread? I thought aloud. Yann didn’t seem very excited. Zucchini soup! I had eaten a zucchini, squash and corn soup at Angelica Kitchen, and thought about attempting to replicate it. It should be a cinch. I investigated what I had: scallions, sweet corn, thyme and yellow and green zucchini. Perfect. In the spirit of eating locally, which I will be doing whole-heartedly for a week in September, I thought this would be a step in the right direction.
Sweet Corn and Zucchini Summer Soup with Thyme
3 scallions, chopped
3 T olive oil
salt and pepper to taste
2 cloves garlic, minced
pinch of cayenne
3 medium zucchinis, or substitute summer squash, diced
1 ear of sweet corn
1 T of fresh thyme
Put olive oil in a medium pot on medium heat. Add chopped scallions, salt, pepper, thyme, cayenne pepper and minced garlic and sauté until it begins to brown. Add zucchini and cook until soft. Remove 1/4th of the cooked vegetables from the pan, adding to a blender along with 3 cups cold filtered water. Blend until pureed, then add the mixture back to the pot. Add corn and let simmer for 20 minutes. Garnish with parsley and Parmesan cheese if you so desire.
Here’s a delicious and easy raw food recipe: Avocado Carrot Soup. Ready in 5 minutes. You can eat it warm or cold.
These are the best raw chocolates. I make them myself and consider it a healthy alternative to store bought chocolates.
Recipe
First warm up the coconut butter (au bain marie) until it becomes a liquid. Then pour in your blender. Add the honey, stevia, vanilla and salt. Mix briefly in your blender. Then add the almond butter. Blend again on low speed or with hand.
Now add the chcolate powder. Make sure the mixture doesnt become too dry. If so, add some more liquid coconut oil or almond butter. Mix well on low speed or with hand.
Now scoop the mixture in an ice cube mold. I use a small spoon. You can add nuts, goji berries or rasins for decoration if you like. Leave in the freezer for about 20 min or put in fridge for an hour.
Now you have delicious chocolates! Enjoy!
