Valentina’s Potato Salad
Ingredients (use vegan versions):
3 medium potatoes
1 large carrot
1 cup peas
1 cup chopped green string beans
1 small red onion
1/4 pepper
1 stalk celery
handful chopped cilantro
3 tablespoon apple cider vinegar
3 tablespoon Virgin Olive oil
1 teaspoon sea salt
1/2 teaspoon ground black pepper
Directions:
Slice onions, celery and pepper into thin strips. Add salt and ground black pepper and set aside at least 1/2 hour before preparation (this will make them very soft). Chop potatoes, carrots and green string beans into small fingers and steam along with the peas for about 15 mins…
