When I saw prunes as a main ingredient in this cake, I new I had to try it. It made a really nice bundt cake and didn't sink at all in the middle. The flavor was good, too. I would consider it to have a "light" chocolate flavor. I prefer an intense chocolate flavor so next time I will probably add extra cocoa powder and some vanilla.
Being the first day of summer in Sunny San Diego and 95 degrees — this is looking really, really good.

I know it might sound kind of stupid but do you cook the rice before you add to the oil or not 
i added tofu to make it thicker and a but of applesauce to cover up that soy proteiny taste, worked out very well! got rid of my munchies
I really like this too! It was simple and made a whole lotta food….but there is hardly any left, I just couldn't stop eating it. Next time I might use a little less curry power so that there would be more coconut flavor, oh and I used light coconut milk
